怎麼料理保羅大師章魚燒?

章魚燒作法/炸彈燒(章魚燒使用份量*3-4倍)

1KG章魚燒粉

18顆蛋

1500CC水

果糖50CC

 

醬油料作法(依比例調製)

醬油膏3(碗)+醬油1+烏醋1/2+米酒1+柴魚1/2

(大火煮5分鐘 攪拌 勿使糖沉澱鍋底會燒焦

小火煮50分鐘)

 

沙拉作法:

白砂糖半斤 鹽一湯匙 味素半匙 蛋9粒 一起打均勻後,沙拉油3公斤(加慢一點)

打硬時,倒入工研醋100CC

 

製作流程

1. 噴油 至 鐵煎盤 ,使用刷子塗抹均勻(首次)

2. 倒章魚燒粉漿 至 鐵煎盤上的洞半滿

3. 放下煮好的章魚塊

4. 放下餡料順序A高麗菜B芹菜C蝦米D胡蘿蔔

5. 再倒入章魚燒粉漿使鐵煎盤的洞稍微溢出平面

6. 放麵包屑於章魚燒漿上

7. 用叉子將章魚燒漿旋轉成半圓型 噴少許油於四周

8. 再將丸子旋轉成圓型 使章魚燒變色 變成金黃色 表皮-微硬

9. 裝盒A六粒丸子平放B抹醬料C灑胡椒鹽/胡椒粉/芥末醬/辣椒粉/番茄醬

10.   擠沙拉 放柴魚片 綁橡皮筋 放叉子
